Raw Tabouleh mmm!!!

I want to share a great recipe that I made a while ago. I really enjoy it and I hope that you will too. Make enough for the next day, and always make enough to share!

Tabuleh
½ head cauliflower
2 small heads broccoli
1 lemon juiced or whole if using a high speed blender
1 head parsley
¼ cup mint
2 tsp cumin
1 tsp salt
1 tbsp. olive oil

In the blender or food processor, combine the cauliflower, broccoli, lemon. Cumin, salt and olive oil until chunky consistency. Chop the parsley and mint. Mix this together by hand and serve. Sometimes I find the broccoli is slightly sour. If this is the case, add a pinch more salt and some more olive oil, this usually tones down any sourness! This recipe is really amazing. Sometimes I double up the quantities and further mix the second half. I use this in my ‘rawiche’s’, Raw burgers, and as a dip with any veggie’s!
